Hydration, flour, yeast, salt, mixing, gluten development, dough temperature, balling, cold fermentation, and proofing.
One-on-One Pizza Coaching
Bring me your dough recipe, oven setup, photos, equipment, goals, and biggest frustrations. We will spend 60 minutes identifying what you should change first and building a clearer plan for your next bake.
Introductory founding-client rate with limited availability.
Personalized Pizza Help
A recipe cannot see your dough, inspect your finished crust, understand your oven, or know which parts of your process are creating problems.
Your biggest opportunity might be hydration, fermentation, flour, dough temperature, rack placement, steel temperature, topping moisture, stretching, launching, or process consistency.
We will look at your actual situation and decide what you should change first, rather than making five changes and hoping one of them works.
What We Can Cover
The session is built around your questions. We can focus narrowly on one stubborn problem or review your complete pizza-making process.
Hydration, flour, yeast, salt, mixing, gluten development, dough temperature, balling, cold fermentation, and proofing.
Home ovens, Ooni, Gozney, steels, stones, pans, rack placement, preheating, bottom browning, and top heat.
Dough handling, opening the skin, preserving the rim, avoiding tears, managing sticking, and launching more consistently.
Tomato selection, sauce balance, cheese blends, topping load, fresh mozzarella, seasoning, and moisture control.
Building a repeatable formula, preparing efficiently, tracking variables, and learning from one bake to the next.
Honest help deciding which pans, tools, mixers, ovens, steels, and upgrades could actually improve your pizza.

Your Pizza Coach
I have several years of professional pizzeria experience, more than two decades of making pizza at home, and hundreds of recent pizzas made while building The Best Pizza Shop.
My main focus is East Coast and New York-style pizza, but I also make Detroit, Grandma, tavern-style, pan pizza, gluten-free pizza, and pizzas in outdoor high-temperature ovens.
My goal is not to force you into one exact recipe. It is to understand the pizza you want to make and help you improve it with the equipment and environment you actually have.

No. New York and East Coast pizza are major areas of focus, but sessions can also cover Detroit, Grandma, tavern-style, pan pizza, outdoor ovens, and general dough problems.
No honest coach can guarantee perfection after one call. I can identify likely problems, recommend specific changes, and give you a much clearer testing process.
Sessions may be rescheduled with at least 24 hoursβ notice. Missed calls and late cancellations may not be refundable.
